Ever since I was in high school I had the dream of writing a book. Like many of us, I have a few books in my head that have been traveling the world with me, keeping me entertained--in my own mind--for years. Many of these ideas surfaced through faith and meditation, during the time when I created, produced, and co-hosted the lively and entertaining radio series, Conversations with Beth and Dan, and A Balanced Life with Beth and Tracy; (Contact Talk Radio, Seattle and online). The shows welcomed notable guests such as Dr. Oz, Deepak Chopra, Dr. Barry Sears, celebrity fitness guru Tracey Austin and several inspiring and notable authors. I continued on and produced/hosted my PBS TV series, For Her Information, which aired in Chicago, as well as in sixty other US markets--including Israel and Turkey. The series episodes also played out on the pages of my published magazine, For Her Information, the Chicago magazine for women--offering women inspiration, ideas, and solutions to improve their lives and the world around them. The accompanying magazine website (FHI) was awarded the Stevie Women in Business Award for best website.
Following a serious car accident in 2007, I was forced to quit filming my TV series and shift gears; I went back to school and received a Certification of Health Counseling from Columbia University and the Institute for Integrative Nutrition in New York City. As a holistic nutritionist and health counselor I work with individuals and corporations to find health and balance through nutrition, fitness, and lifestyle coaching.

I studied holistic nutrition under health and wellness luminaries such as Dr. Mehmet Oz, Deepak Chopra, Andrew Weil, David Wolfe, Dr. Walter Willett, Matthew Kenney, and Barry Sears at the Institute for Integrative Nutrition. My work with my companies, Restoring Essence, LLC and For Her Information Media, LLC offer a perfect blend of services, giving clients the opportunity to creatively entertain their mind, find happiness, learn about food, and become accountable for their own health and wellness.
Following the work I did with private clients on health living programs, my book, Real Moms Love to Eat (Penguin/NAL, 2012) was published and became an Amazon bestseller, won a Nautilus Book Award, and four Beverly Hills Book Awards My book written with friend and co-author, Eve Adamson, shares ways to get back into that love affair with food to make us look fabulous (and feel great). The 21-day food plan included, gives readers the opportunity to engage in lots of great recipes, saving the lettuce-only food plans for the rabbits.
After the website for my book, Real Moms Love to Eat was hacked, losing all of the wonderful articles, food reviews, and product evaluations, I shed a few tears, bucked up, and started from scratch.
I was thrilled to raise plenty of sponsorship funds to support a national book tour to share my non-fiction book with mom bloggers and women across the country. I appeared on many national and local news outlets sharing the book, it's recipes, and mission. We received wonderful reviews and print media, giving RMLTE a real presence in the world of healthy eating books.
I hold a B.A. in English/Journalism from Kent State University and Christopher Newport University in Virginia. With more than 30 years of on-camera experience, as well as training at the Second City Training Center in Chicago and the Alliance Theater in Atlanta, I have developed the enigmatic wit and compassion to engage and captivate audiences and groups during my speaking engagements, workshops, and seminars. I held the lead role in all of Delta Airlines on-board videos for five years, appeared in several commercials, and have been featured on numerous radio shows and media outlets.
Having completed four marathons as a mother of three, including the coveted Boston Marathon (with a personal best time), I learned about my body, nutrition, and my love for Jesus Christ. Due to running injuries, I was faced with the challenge of working through my pain to find healthy solutions that supported my training rather than medicating it. My natural instinct to research and delve into nutrition and wellness topics brought me to a place of spiritual growth, health, happiness, and a personal best marathon time in Boston.

My latest writing project, PINK SLIPS, a Women's Suspense Thriller novel, was published in June, 2017. I think you'll fall in love with and root for Betsy Ryan as she navigates life in a north shore suburb of Chicago. She's a private chef who's pregnant with her third child, trying to save her crumbling marriage while running from a threat too hard to comprehend. I am also working on and researching manuscripts for a special women's fiction (cozy) collection, focusing on special occurrences surrounding angels, and touching spiritual stories.
When I'm not spending time with my family and volunteering at my church, I enjoy delivering engaging lifestyle and healthy living fundamentals through keynote addresses, lectures, classes, and as a media spokesperson. I write about lifestyle, health and nutrition topics on popular websites including, Diet.com, SocialMoms.com, HotMomsClub.com, and 30Seconds.com.
I've served as a board member on the American Cancer Society in Chicago's north shore and served as President and board member of the University of Chicago Cancer Research Foundation Auxiliary Board for six years. I was served as a board member and Luminary Circle Member of Step Up Women’s Network, Chicago chapter, where I served as a mentor for young up-and-coming businesswomen. I have also served on the original Executive Committee and developed and created the guidebook for Cool Globes, an artistic global warming exhibit that appeared on Chicago’s lakefront in the summer of 2007.
In my free time, I love to read the Bible, write, cook, exercise, run, swim, and play golf with my family. I'm blessed with the love of my husband, three sons, and extended family and friends. My two Tibetan Terriers, Karma and Bonsai, keep me company while I write from home, enjoying the view from my kitchen window. Please send me a note via my contact form on this site.
Thank you for your kind support and I hope to hear from you sometime soon,
Beth
